    “I love to fix nachos for my husband and me as a hearty snack or light supper. I’m so glad I found this recipe. I usually have these ingredients on hand so I will be making these nachos often. I used tomatoes with green chilies then added a sprinkling of chili powder, cumin and garlic salt to the bean and tomato mixture. I had a small avocado that needed to be eaten so I cut it into small chunks and sprinkled it on top after baking. Yum!” —Carmen Edwards

    Bacon-Cheese Puff Pie

    “I had some late-season homegrown tomatoes that I used in two different recipes: This Bacon Cheese Puff Pie and this Spicy Ketchup recipe. We enjoyed both! The Puff Pie was delicious for brunch and the leftovers reheated perfectly the next day for supper. The ketchup had a delicious “kick” to it, which we thought was great, and since it only stores for a short time in the fridge, I froze a portion of it to enjoy later this winter.” —Sue Gronholz
