Everyone is enjoying the fresh fruit and bright colors are everywhere.This Mini Fruit Pizza recipe is so easy to make with store-bought shortbread cookies and it is less messy to eat than the traditional version. It’s the perfect summer dessert for everything from a bridal shower to a backyard cookout.

How To Make Mini Fruit Pizza:

Step One: Make The Cream Cheese Frosting

To make the cream cheese frosting, beat the softened cream cheese until smooth. Add the thawed Cool Whip (or whipped cream) and stir in the powdered sugarandvanilla. Beat until smooth. (This makes extra frosting and I had about one cup leftover after frosting twenty cookies.)

To make things super easy, I used Sandies Shortbread Cookies, but go ahead and make homemade sugar cookies or shortbread cookies if you prefer. They would be delicious either way. Spread one tablespoon of the frosting on each cookie.

Step Two: Slice The Fruit

For the fruit, I used mandarin oranges, kiwi, strawberries, and blackberries. Blueberries also work well but my local grocery store was completely sold out.

Cut the kiwi, strawberries, and blackberries into smaller pieces. My mandarin oranges were small, so I left them whole.

Step Three: Top Shortbread Cookies

Top each cookie with a combination of fruit. Another fun option would be to frost the shortbread and then allow guests to add their own favorite fruit toppings. Just cut all of the fruit up and put it on the serving table in small glass bowls.

You can make this dessert the night before and the shortbread cookies will soften overnight. Store them in the fridge until ready to serve.

1. How long can you keep fruit pizza?

For best results keep for up to 3 days. Keep in mind the cookies will soften and the fruit will start to dry out.

2. Can you freeze them?You could freeze them but I would not recommend doing so. Consume in the first 24 hours for the best outcome.

3. Are they gluten free?In order to make this gluten free, you will need to use a gluten free sugar cookie or shortbread cookie.

4. Looking for a lighter version? For lighter frosting, try using a light cool whip and fat-free cream cheese. Instead of a regular shortbread cookie try finding a healthier cookie or use a graham cracker or even a slice of fruit.

Ingredients

  • 8 ounce package cream cheese, softened
  • 8 ounce container or 3 cups cool whip, or use whipped cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • 20 shortbread cookies, or use homemade sugar cookies
  • 1/2 cup sliced kiwi
  • 1/2 cup sliced strawberries
  • 1/2 cup sliced blackberries
  • 1/2 cup mandarin oranges

Instructions

  1. Beat the softened cream cheese until smooth. Add the cool whip and beat until smooth. Stir in the powdered sugar and vanilla.
  2. Spread 1 tablespoon on each cookie. (I had about one cup of frosting left over.)
  3. Top frosted cookies with sliced fruit.
  4. Store in the fridge until ready to serve.
